Blueberry Bran Loaf - Ninja Foodi Style
This delightful recipe uses a Ninja Foodi in order to make the best bran loaf ever! Could be healthier, If you prefer, use less butter and substitute sugar with dried fruit and if you must, use only one egg. Feel free to try other fruits ( dried or fresh ), dates, figs, other types of nuts - the possibilities are endless.
Ingredients
Directions1/2 Cup Oak Bran (Steel Cut preferred)1/2 Cup Multi-bran Cereal - ground to liking1/2 Cup Brown Sugar - Dark1/4 Teaspoon Kosher Salt1 Teaspoon Baking Soda1 Teaspoon Vanilla Extract3 Teaspoons Buttermilk Powder2 Whole Eggs1/2 Stick Butter (Softened a lot)1/4 Teaspoon Cinnamon1/2 Teaspoon Honey1/4 Cup Blueberries - Fresh1/4 Cup Milk1/8 Cup Walnuts1/8 Cup Pecans
- In small bowl, combine flour, cereal, steel cut oats, baking soda, salt and buttermilk powder. Mix
- In large bowl, combine brown sugar, vanilla extract, egg, butter, and milk. Whisk thoroughly
- Preheat Ninja Foodi (bake @ 315 F for 5 min. Wait until ready before preheating.)
- Gradually mix in contents of small bowl into large bowl.
- Apply Pam to loaf pan, then fill with dough
- Add honey then nuts to top of loaf (optional.)
- Place loaf on rack and Bake for 30 min @ 315 F.
- Remove rack and loaf, let cool for 30 min.
- Ensure Bubba eats remaining previous loaf (if applicable.)
